Pork Humba on a Weekend

Pork Humba is a traditional Filipino dish made with pork belly cooked in a sweet and savory sauce with soy sauce, vinegar, sugar, and other seasonings. Here’s a simple recipe you can try:

Ingredients:

• 1 kg pork belly, sliced into cubes

• 1 cup soy sauce

• 1 cup vinegar

• 1 cup brown sugar

• 1 cup water

• 1 tbsp garlic, minced

• 1 onion, chopped

• 3 pcs star anise

• 3 pcs bay leaves

• Salt and pepper to taste

• Cooking oil

Instructions:

1 In a large pot, heat some cooking oil over medium heat. Add the pork belly and cook until browned on all sides.

2 Add the garlic and onion and sauté for a few minutes until fragrant.

3 Pour in the soy sauce, vinegar, brown sugar, and water. Stir until the sugar is dissolved.

4 Add the star anise and bay leaves. Bring the mixture to a boil, then lower the heat to a simmer.

5 Cover the pot and let it simmer for about 1 hour or until the pork is tender.

6 Once the pork is tender, remove the lid and let the sauce thicken for another 10-15 minutes. Season with salt and pepper to taste.

7 Serve hot with rice and enjoy your delicious Pork Humba!
