Sisig is a popular Filipino dish made with chopped pig's head, liver, onions, and chili peppers. There are many variations of sisig, but here's a recipe for a delicious and sizzling sisig:
Ingredients:
• 1 lb. pig's head
• 1/2 cup pig's liver
• 1 onion, chopped
• 3 cloves garlic, minced
• 2-3 red chili peppers, chopped
• 2 tbsp. soy sauce
• 2 tbsp. vinegar
• 2 tbsp. calamansi juice (or lemon juice)
• Salt and pepper, to taste
• 2 tbsp. cooking oil
• 1 egg
• Green onions, chopped (for garnish)
Instructions:
1 Boil the pig's head in water until tender. Remove from the water and let it cool down. Cut the pig's head into small pieces.
2 In a pan, heat the cooking oil and sauté the garlic and onions until translucent.
3 Add the chopped pig's head and liver and cook until browned.
4 Add the soy sauce, vinegar, calamansi juice, and chopped chili peppers. Mix well and let it cook for another 5 minutes.
5 Crack the egg over the sizzling sisig and mix it quickly until the egg is cooked.
6 Garnish with chopped green onions and serve hot.
