Bicolanos are known for its very hot recipes. They really love to eat and make food that includes hot spices or chilies! In fair point, Filipinos really love to eat spicy foods indeed! So today, The Public Servers will teach you how to cook your favorite Bicol Express specially this pandemic!
Bicol Express Ingredients
1 (tablespoon of shrimp paste)
1 250-ml can coconut cream
2 medium tomatoes, (chopped into cubes)
3 to 4 tablespoons of cooking oil
6 cloves garlic, (finely chopped)
1 large onion, thinly (sliced)
1 thumb-sized piece ginger, (finely chopped)
1/2 kilo (leftover) adobo
12 to 15 green finger chilies, (sliced)
3 to 5 bird's eye chili (siling labuyo), (sliced)
How to cook?
1. Heat up oil in a pot over a medium heat. Sauté the following: garlic, onion, and ginger until fragrant.
2. Add your leftover adobo and shrimp paste. Then simmer it for 3 to 5 minutes.
3. Add coconut cream (gata of coconut) and continue simmering it for about 10 minutes.
4. Add the tomatoes and chilies. Remove from the heat and serve it immediately.
